Ingredients:
- 1 lb. hot or mild ground turkey Italian sausage
- 1 small onion diced
- 3 large carrots diced
- 2 stalks celery diced
- Other vegetables as you like, diced
- 3 cups chopped kale (stems removed)
- 1 cup red kidney beans or black beans
- 1 large package of cheese tortellini
- 32 ounces of chicken bone broth
- 32 ounces of chicken stock
- 2 tsp fresh chopped garlic
- 1 tsp ground sage
- 1 tsp ground thyme
- 1 tsp ground rosemary
- 1/2 tsp black pepper
- 1 tsp sea salt
- Added after cooking:
Directions:
- In Dutch Oven or Soup Pot:
- Brown the ground turkey sausage
- Add onions, carrots, celery, and any other diced vegetables stir and then cover for 3-5 minutes to sweat the vegetables
- Add chopped garlic and stir until fragrant
- Add bone broth and chicken stock
- Add kale cover the pot and bring to a boil
- Add sage, thyme, rosemary, black pepper and salt stir and cook for 2 minutes
- Taste to see if additional salt or pepper is needed
- Add cheese tortellini, cover and cook for another 10 minutes
- Turn heat off and let sit for 5 minutes
- Put into bowl and sprinkle with Parmesan cheese and fresh parsley

- 1 pound of lean ground turkey
- 1 small onion diced
- 1 green pepper diced
- 2 cups kidney beans
- 12 ounces of salsa
- whole tortilla
- 1 cup of ricotta or cottage cheese
- 1 cup of shredded mozzarella cheese
- 1.5 tsp cumin
- 1.5 tsp chili powder
- 1/4 tsp sea salt
- 1/4 tsp black pepper
- 1/4 cup fresh cilantro
- 1 cup shredded cheddar cheese
Directions
- In frying pan:
- Cook the ground turkey in a frying pan until no longer pink
- Add onions and green pepper until cooked through
- In small bowl:
- Mix ricotta cheese, mozzarella cheese, cumin, chili powder, sea salt, and black pepper
- Preheat oven to 375 degrees
- In a greased 9 x 13 pan:
- Put a thin layer of salsa on the bottom of the pan
- Put a layer of tortillas down
- Then layer ground turkey, ricotta cheese mixture, kidney beans, salsa, and cheddar cheese
- Put a layer of tortillas down
- Then layer ground turkey, ricotta cheese mixture, kidney beans, salsa, and cheddar cheese
- Put a final layer of tortillas down
- Put a final thin layer of salsa and then add cheddar cheese
- Cover the pan loosely with foil and bake for 30 minutes (or until heated through)
- Remove foil, place pan on top shelf and broil for 3-5 minutes until the top cheese browns
- Remove from the oven and let stand for 5-10 minutes before serving
- We served with plain Greek yogurt on the side and Sriracha sauce drizzled on the top
